I put a football helmet on over my regular headphones and I feel "surrounded".   Might not be the same thing though...

This is what I use and they are pretty awesome even though they are only 5.1. This page lists them as being $99.95 but can be got for about $50.

Basically its the number of speakers 5.1 five speakers 1 subwoofer, 7.1 seven speakers and 1 sub.  7.1 separates the rear channels from 2 channels into 4, so there would be 4 speakers in the rear of the room instead of 2,
one on each side 2 in the back.  5.1 is the standard right now but more and more movies are using 7.1.  I'm not sure if it would matter much in gaming though, if you heard something to the side and rear of you your going
to turn and look. Either one will reproduce the sounds behind you.  7.1 is best used for larger home theater rooms, I'm not sure if you could tell the difference in a set of headphones.
